The Verandah, the all-day dining multi-cuisine restaurant at Vivanta by Taj-Connemara presents the exotic Awadhi Food Festival from October 16. Shamshad Ahmad, Master Chef of Indian at Vivanta by Taj, Gomti Nagar, Lucknow together with the team of Chefs led by Executive Chef Jaffar Ali, will treat diners to fine kebabs, kormas, biryanis and warqi parathas prepared in authentic Awadhi cuisine style, celebrating the charm of a princely era.

The richness of Awadh cuisine lies in the variety of cuisine, fresh ingredients used like mutton, paneer, and rich spices, which include cardamom and saffron.

Begin with Murg ka shorba (Mild spiced delicate chicken soup); or the delicious Tomato dhaniya ka shorba (Tomato coriander flavoured soup). Go for the live stations like Panner tikka hariyali (Mint and coriander flavoured tandoori paneer); Mutton gilafi kebab (Tender seek kebab with Awadhi exotic spices);

Mutton Shammi kebab (Tender mutton minced kebab shallow fried); or the Khoya khubani ke kebab (Apricot infused khoya kebab). Then take a deep dive in to the maincourse that includes dishes like Bhindi gosht (Okra mutton curry Awadhi style); Handi Murgh (A specially cooked Lucknowi chicken masala with handpicked select spices); Home-style pomfret curry (Lucknowi mild pomfret home style preparations); and Dum kofti biryani (Kabuli channa kofta biryani) for non-vegetarians, while vegetarians can savour Shahi panner (Paneer dum cooked in Mild rich gravy);

Gobhi taka tin (Cauliflower cooked dry on hot plate with Awadhi mild spices); Dabi arbi ka salan (Colacassia cooked in a mild spiced mango flavoured rich gravy); Dum aloo dhaniya wala (Baby potatoes cooked in a green dhania  gentle spices); Shahi urad dal (Creamy rich dal from Nawabi kitchen); and Zaffrani pulao (Aromatic saffron flavoured pulao).

Round of this scrumptious meal with desserts like Shahi tukra (Rich creamy dessert of bread slices, dry fruits, nuts and saffron); Sheer Korma (Vermicelli, saffron, raisin & date kheer); and Lawki halwa (Rich halwa made of bottle gourd, almonds, sultha and khoya).
